I love to visit casual beach spots to enjoy things like crispy coconut shrimp, jumbo lump crab cakes or a juicy burger fresh off the grille. And don't forget a cool glass of Whispering Angel rose' in the afternoon. Trust me, I'm going to enjoy ALL the things but to balance all of that out, I want to have a few things on-hand that are healthy, delicious, and oh so easy to make. Enjoy three of my favorites that I make every single week during the summer!

1 very ripe peach
1 dollop of unsweetened Greek yogurt
2 tbs. of crushed pistachio (roughly a small handful)
1 tbs. of honey
Slice the peach & place in a small dish. Top with the crushed pistachio, a dollop of yogurt and drizzle with honey.
This one takes no time to make and is a perfect snack or a light dessert.
1 cup dry oatmeal (rolled oats)
2/3 cup coconut flakes
1/2 cup peanut butter
1/2 cup ground flaxseed
1/3 cup honey
1 tbsp. chia seeds.
Mix all ingredients together and let set in the fridge for ½ hour. Roll into small, 1” balls and store in an air tight container in the fridge. You can remove or add in any ingredient (like chocolate chips) to your preference.
These are so delicious and satiating, nobody will know that they're actually healthy. Just one of these can keep you from getting hangry! If you're headed out on a boat, pop these into the freezer the night before & they'll stay cool during your trip without getting melty.
SEASALT AVOCADO TOAST
1/2 ripe avocado
1 tsp. of chia seeds
1 tsp. of unflavored protein powder
1 slice of sturdy toast
Mash the avocado with a spoon and a fork to make it really creamy and smooth. Mix in the sea salt, chia seeds and protein powder. Pile it high on top of your favorite sliced bread that has been toasted. That's it! It's really that simple!
I love avocado toast SO much that I could eat it for breakfast, lunch, dinner, and an afternoon snack. YUM!
Ok, let's be honest, Doritos are also a yummy summertime snack. I try not to buy them unless we're on vacation but if someone else brings them, I will eat all of them. You've been warned ;)
